Healthy Sweet Potato & Oat Protein Loaf Cake Recipe

sweet potato protein loaf cakeWalking down the fresh baked good’s isle in any supermarket always gets my taste buds tingling. (No that’s not the beta alanine tingles, it’s just a good old’ fashioned food craving)

From loaves of fresh baked breads, to cakes, and the mash up of a loaf cake. A sweet bread loaf that always looks too good to just have one slice.

Rather than restrict yourself and be miserable though, Sabine from http://www.bruisesandcalluses.com/ has you covered with this protein packed sweet potato & oat loaf cake. Any regular readers of the site, or viewers of the Youtube Channel will know that I love oats, and that I eat sweet potato every day.

Wither winter approaching, how about you busy out this to warm you up on those cold winter mornings, or to have as an afternoon muscle building snack.

Here is the entire ingredients & recipe from Sabine.

High Protein, Sweet Potato, Oats & Pumpkin Loaf Cake Ingredients

1 cup rolled oats (100 g)
1 cup oat flour (100 g)
1/3 cup Whey Protein (40 g) I used the Pumpkin whey by True Nutrition, but you can use any flavor
220 gr of cooked sweet potato (no skin)
to cook: cut sweet potato in half, lay skin up in a shallow dish with water and zap in microwave on high for about 8 mins

3 egg whites (50 g)
2 whole eggs
1/2 cup almond milk (120 ml)
2 tbsp  almond butter (50 g)
1-2 tbsp erythritol (optional) *

Cooking Instructions

  • Heat the oven to 180C.
  • Mix all the wet ingredients together, I used an immersion blender, then adding each dry ingredient and mix in each time so it all blends in well.
  • Mix until a thick batter has formed ( but still pour-able.)
  • Pour into a silicone oaf pan
  • Bake in the oven for about 20-25 mins.

* To add in extra sweetness, you can add a sweetener, but in my case the pumpkin whey was quite sweet already, so I left it out.

This recipe uses a pumpkin protein powder, however I also find that using any of MyProtein’s Impact Whey Protein flavours taste awesome.
